Traditional Costa Rican breakfast served with fried eggs or scrambled eggs.
- 2 tablespoons of vegetable oil.
- 1 red pepper
- 1 small yellow onion
- 2 cloves garlic
- 2 cups of cooked black beans
- 3/4 cup bean cooking liquid
- 1/4 cup of Salsa Lizano * or more to taste
- 3 cups of rice cooked the day before
- 1/4 cup chopped fresh cilantro
* Salsa Lizano can be found in delicatessens or on the Internet.
