Gallo Pinto

 

Traditional Costa Rican breakfast served with fried eggs or scrambled eggs.

  • 2 tablespoons of vegetable oil.
  • 1 red pepper
  • 1 small yellow onion
  • 2 cloves garlic
  • 2 cups of cooked black beans
  • 3/4 cup bean cooking liquid
  • 1/4 cup of Salsa Lizano * or more to taste
  • 3 cups of rice cooked the day before
  • 1/4 cup chopped fresh cilantro

* Salsa Lizano can be found in delicatessens or on the Internet.

 

  1. In a skillet over medium-high heat.
  2. Put in the oil Melt the chopped peppers and onions for 6 to 8 minutes.
  3. Add the minced garlic to cook for about 1 minute.
  4. Add the previously cooked black beans, the bean cooking liquid and the lizano salsa, stir well then simmer for 5 minutes.
  5. Stir in the cooked rice, heat the rice for 3 to 5 minutes so that hardly any cooking liquid remains.
  6. Add the chopped cilantro.
